Ingredients:
- 200 g of a mixture of fine and medium semolina
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 150 g of butter, or olive oil
- 1 small glass of warm milk
- water
The harcha or Moroccan semolina cake is used for breakfast or snack. It is an economical recipe, quick and simple to do. It can be prepared at short notice if it receives surprise guests for example, or serve for brunch, breakfast or snack with friends.
Traditionally it is made with semolina and olive oil, and prepared in the form of a large family galette served with olive oil, the most basic way. Over the years, we get all kinds of improved version stuffed.
I will save you a way to do it, and serve mini pancakes, prettier and more convenient.
In a bowl, combine the cornmeal, salt, baking powder, melted butter or oil. Get a pastry, semolina must absorb the butter.
Add the glass of milk, let the dough gently absorb. Mix, adding water if necessary until a smooth, homogenous and malleable. Especially do not knead.
Leave on for a few minutes. Sprinkle your work surface semolina, place your dough, spread it, to a thickness of one centimeter, and cut with a bowl or cookie pieces mini patties.
Put on the fire a non-stick pan and cook three to four minutes per side, turning gently.
This is what is ready, serve with honey, olive oil, butter, black olives, or accompaniment to your taste.
